Rich Peanut Sauce

The perfect peanut sauce- she’s hard to come by! Peanut butter is sinfully delicious, but it can be a bit overpowering (like that aunt at thanksgiving). I’ve made plenty of peanut sauces for all my dipping and noodle needs- but I’ve often felt that the peanut butter flavor wasn’t balanced with the other essential flavors of the PERFECT peanut sauce.

Enter… coconut milk! You didn’t think she should be invited to this party, but she showed up anyway, and she was just what was needed for a wonderful evening. Adding coconut milk helps to distribute the strong nutty flavor, ease the spice of ginger and sriracha, and adds a hint of sweetness that is ALWAYS welcome.

Now whip out that jar of peanut butter, ~carefully~ open a can of coconut milk, and enjoy!

Peanut Sauce

INGREDIENTS

  • 1/2 cup peanut butter

  • 2 1/2 tbsp soy sauce

  • 1 1/2 tbsp rice vinegar

  • 2 tbsp maple syrup/honey

  • 2 tbsp coconut milk

  • 1/2 tbsp sriracha

  • 2 garlic cloves, minced

  • 1 tsp ginger, minced

  • 2 tbsp water

DIRECTIONS

  1. Mix all ingredients (minus the water) until well combined

  2. If sauce is too thick, add water, 1 tbsp at a time, until desired consistency comes to fruition

  3. Refrigerate for up to 2 weeks

  4. Mix into noodles, use as a dipping sauce, or drizzle over dumplings

  5. Dive in!
