Elote Sweetgreen Bowl

Yield: Serves 2-3

Time: 35 to 45 minutes

INGREDIENTS

{Charred Corn}

  • 2 ears of corn, kernels removed

  • 1 red/orange bell pepper, diced

  • 2 tbsp olive oil

{Cilantro Lime (No) Mayo Dressing}

  • 2 garlic cloves

  • 1/2 cup cilantro

  • 4 tbsp olive oil

  • 2 tbsp acv

  • Zest of 1 lime

  • Juice of 1 lime

  • 1/2 tsp cumin

  • 2 tbsp nutritional yeast

  • salt/pepper to taste

Salad Mix-In’s

  • 8 to 12-ounces of arugula

  • 1 cup shredded red cabbage

    • seasoned with juice of 1 lemon, salt/pepper

  • 1 cup wild rice/quinoa/barley/faro

  • 1 cup chopped grape tomatoes

  • 1/2 cup slivered spicy almonds, for garnish

  • cotija cheese, for garnish (substitute with any vegan or non-vegan farmers cheese)

  • tajin, for garnish (substitute with any vegan or non-vegan farmers cheese)

DIRECTIONS

  1. Heat skillet with olive oil over med heat. Char corn and peppers for about 5 mins. Season with salt/pepper Set aside.

  2. In a food processor, blend all dressing ingredients until combined. If too thick, add 1 tbsp water at a time to thin. Taste and adjust seasoning.

  3. Toss arugula with 2 tbsp of dressing. Garnish with cabbage, tomatoes, and charred corn. quinoa, cotija cjeese, spicy almonds, and tajin

  4. Dive in!
